Tacos with no taco shell!
Trim Healthy Mama is all about not mixing fats and carbs. In the book the authors go into the importance of not eating corn. Corn is used heavily to fatten animals. Can it be fattening humans too? Of coarse. I have no problem with eating a Taco Salad. I've done it for years. But, there is something about filling a shell and hearing that "Cruuuuunnnnch!"
No recipe here. Just brain cells flowing in genius way. I was gonna cut my Romaine lettuce for my usual salad and I saw how firm and big the leaves were. Insert lightbulb above head. They were quite messy, but what taco isn't? My filling is standard: Taco meat with homemade seasoning [always], cheese, avocado, sour cream, salsa, a few tomatoes and chopped orange peppers.
Incidentally, a very smart friend of mine makes enchiladas and burritos with collards. She removes the stem (not cutting all the way up the leaf), boils them in salted water until wilted, fills them, rolls them up an bakes them just like normal.
Genius!
