NO BAKE....Pumpkin Bites {S}

I had a small amount of canned pumpkin left in my frig and created these on a whim. Not to build them up too much, but they remind me of those donut holes you buy in a box. I'm gonna steal the THM saying and say... Own It!! Make this your own. I just made these on the fly, but you can certainly put whatever spin you want on them! I love how the sisters encourage us to be our own chefs! Get creative & Make it work  NO BAKE....Pumpkin Bites {S}: 1 c baking b lend (homemade or THM brand) 1/2 c pure can pumpkin 1 tsp vanilla Splash caramel extract *optional, if you don't have it's okay* Pinch of salt 1 Tb almond butter 1/2-1 Tb pumpkin pie spice, depending how spicy you like it 1 Tb coconut oil Sweetener *the amount is gonna be questionable. Strawberry Parfait with Slim Belly Jelly and Crunchy Granola

Every time I say the word Parfait, I simply must recite the lines from Donkey on Shriek... "Everybody likes Parfaits!" This is wonderful as a breakfast or dessert, or snack.  Just alter how much granola you use.  I start by a couple large dollops of greek yogurt.  To that I'll had a half of scoop of Swanson's Protein powder, a teaspoon of vanilla and sweetener of choice.  (Mine is a couple Tablespoons of ground up erythritol and a dash of stevia.)  Give it a good stir.  It should be just barely sweet, because your Slim Belly Jelly will give it the sweetness you'll need to complete it. My secret to making Slim Belly Jelly (from the THM book): When I grind my Erythritol in my Vitamix, there is always a nice, heavy, residue of powdered sweetness.  I can't get it all into my container.  So here's what I do to harvest every last drop.  I leave a bag of frozen strawberries in the frig to defrost.  (Usually over night) After grinding ...

Fruit Pizza

Fruit Pizza This a universal dish as it has served me well in the dessert, breakfast, lunch and afternoon snack area.  You can replace strawberries with any kind of other berry.  I think that banana extract would be yummy in the cream cheese filling, too.  This is definitely and S meal with all its nut and creamy goodness!   Ingredients: Crust 1 c almond flour  1c pecan flour 1/4 tsp sea salt  1/2 c of sweetener 1/3 c melted butter 1/2 to 1 tsp of almond extract Filling 8 oz. Hash

HASH Back in my previous food life, I loved a good potato hash.  Something about fried potatoes smothered in onions and cheese and dripping with ketchup makes a breakfast fit for queen.   Partnering with a THM lifestyle is so wonderful I never have to feel like I'm sacrificing.  Potato Hash is one of them. In my hunt to replace the white potato with something I was full of ideas.  I came across the lovely Rutabaga! Now... Why not Potato and why rutabaga?  Potatoes are starchy and when have you ever eating a potato alone.  It's almost always fried, drenched in sour cream or spread with cheese.  They are also high on the  glycemic  index.   All a no-no in the THM world.    Enter: The Rutabaga. DOUGHNUTS AND BACON FOR BREAKFAST????  YES, PLEASE!!! This is a fairly quick, easy, {Trim and Healthy} donut recipe. Doughnut?  Donut?  No matter how you spell it... it is yummy! Now, this is a 'cakey' type doughnut, so get the Krispy Kreme taste outta your head! I have tried many recipes and then quickly deleted them all!  This is the only I use and trust it whole heartedly.  If I'm in a hurry or just tired or hungry- I skip the icing and just sprinkle a little  homemade Truvia  on top.  But... the glaze does add a level of sweetness that is to be desired!   Run, don't walk to your kitchen now and make these delicious  DOUGHNUTS!!!! *** I subbed the vanilla with new flavor that arrived yesterday via UPS.  Different types of extracts give a wide range of variety!  I used Yellow Cake Mix in these donuts and you can find it  here!  ***
